HACCP and Safe Operating Procedures development

If you are running a food business you are legally required to have a written food safety management system in place to ensure food is safe for your customers to eat.
You should think about what might go wrong with the food that you sell and what you must do to ensure it is safe for your customers.
You should put in place a system based on food safety practices that you are familiar with, in line with general hazard analysis and critical procedures principles, (HACCP). The level of documentation required will depend on the nature and size of your business.

‘Hazard Analysis Critical Control Point’ is a Food Safety Management System used to ensure that the food you serve to customers is safe to eat.It identifies what (and where) things can go wrong, and where it is critical to develop control procedures.
It is a legal requirement to implement a Food Safety Management System based on the seven principles.
Our Food Hygiene Expert will complete a HACCP plan tailored to meet your individual requirements, taking into account your business size and specific needs.

My focus shall remain on artisan clean foods, so if you use fresh eggs instead of pasteurised ones, i can help you proving it is safe.

Food hygiene audits ( from £100 )

The law requires that you maintain a high standard of both Food Hygiene and Health & Safety within your business. Environmental Health Officers ensure that acceptable standards are maintained and punish those who fall below the legal requirement.           In order to ensure that your business complies fully with all the relevant regulations and so that any problems can be addressed before they become a serious issue, it is recommended that you undertake periodic Food Hygiene and Health & Safety audits.

An audit will involve an inspection of your premises, a detailed review of all your procedures and your current documentation.  Each audit provides a score for your business together with a detailed action plan.
We will discuss the results with the management team, offering advice and guidance on how to improve your Food Hygiene and Health & Safety performance.

Why do you need any of the above?

If you operate in an area which has a FHRS scheme, the food hygiene rating of your last EHO kitchen inspection will be published on a website for your customers and the media to read. You may also display a FHRS certificate at the entrance to your establishment. The food hygiene rating is usually expressed as between 0 and 5.

The FSA are keen to make the display of food hygiene ratings at the entrance to businesses compulsory and are currently consulting on this proposal.
