It is dried and matured on a chestnut or plane tree leaf. Its pate is fine, creamy and reveals a sweet taste. During maturing on the leaf which purpose is not decorative but to regulate humidity and impart flavour, It acquires animal notes, sometimes complemented by woody, vegetal and dried fruit aromas . It takes its name from the commune of La Mothe St Héray in Deux-Sèvres where it appeared for the first time in the 1840s. Since then it has been produced throughout Deux-Sèvres, to the south of Vienne, to the north of Charente and Charente-Maritime. It is awaiting its AOC.
Have it on a walnut or hazelnut bread. Dried fruits are natural companions of goat cheeses.
Pair it with a dry, fairly bold white. A Chardonnay from the Haut-Poitou for instance or a Pineau de Charentes.
