Chistera is a typical cheese from the Pyrenees, whose specificity is the mixture of two types of milk. Gently salty and tasty, very creamy, this Tomme Chistera stands out from other cheeses due to its original taste. 

I like to transfer the chrisosporium sulfureum, yellow mould, on other cheeses... 

 

Variant of Ossau Iraty in an original blend, it can be enjoyed plain or with black cherry jam.

I love to use it in no cow fondue with Tomme de chevre and Tomme de chevre black truffles.
