It ages tremendously well, its paste tightens, its flavours deepen, it becomes nuttier with notes of undergrowth and somewhat spicy after a minute in mouth.
2) Morbier / 350g / Cow/Raw/Animal Rennet / (Semi) hard uncooked pressed / Franche-Comte / 28.4% fat /Faint cellar smell, fruity, lactic, meaty taste.
3) Comté AOP Vieux 18 months/ 300g / Cow/Raw/Animal Rennet / Hard cooked pressed / Franche-Comté / 34% fat/ Notes of citrus fruits, dried fruits, leather, meaty, saltier than Comté fruité but not that much, the creaminess of a young comté and the depth of a vieux comté. Best seller!
4) Livarot AOP / 200g / Cow/Raw/Animal Rennet / Soft washed / Normandie / 22% fat /Penetrating smell, pronounced meaty and grassy flavour. Can be rugged!
5) Roquefort AOP / 300g / Ewe/Raw/Animal Rennet / Blue veined / Aveyron / 32% fat /Strong penetrating smell, pronounced intense long blue taste.
