a nice kick, pronounced long blue taste with hints of apricot.

 

With a slightly salty flavour, this cheese diffuses typical blue aromas which are accompanied by a slight sheep's taste. Being quite rich and powerful, the creaminess of its pate allows it to add a certain sweetness to its tasting. 

 

I like to add some in my no cow fondue, it does pair well with some black cherry jam or with some dark chocolate.

 

Pair it with a  sweet white, Gaillac or Maury or rosé wines, a Rasteau for instance..
