From the 16th century, landless people & labourers raised a few goats, they called them then"poor man's cows".  They made cheeses with their milk which had a large place in peasant food. 

 

Charolais is a cheese appreciated either on a platter accompanied by nuts and chestnuts, or served with a salad with vinaigrette.

 

Pair it with a dry white wine or red wine from the Côte Chalonnaise, and more broadly, new local wines.
