Tomme de chevre / 3,5kg / Goat/Pasteurised/Animal Rennet / Hard uncooked pressed / ripened in Cher /33% fat /Fantastically creamy, nutty and tangy.
This Tomme is a Gouda imported from the Netherlands as a young white cheese and It is ripened in Cher by a Dutch family who emigrated to France. They discovered that a certain mould was growing in the cave where they stocked their cheeses, that mould was particularly suitable for ripening hard gouda like cheeses giving them an almost sweet flavour. Tomme de Chevre retains characteristics typical to goat cheese with a fine creamy almost granular non squeaky pate. It is quite fruity and nutty, not too goaty!
It pairs well with a Sancerre or a Reuilly, it doesn’t work with red wine.
