This is a young gouda brought over from the Netherlands by our Dutch affineur Martin Van Iperen. Ex-trader in gouda cheeses, he emigrated to France where sheer luck turned him into an affineur. This is common practice in France to purchase young gouda cheeses from the Netherland and ripen them in a thousand ways.
Accompany it with a glass of Blanc de Blanc Champagne or a white wine with a bit of brioche flavors like a Chenin de Loire. As an aperitif or at the end of a meal, your choice!
