This is a young gouda bought young from the Netherlands  and ripened in house following our affineur very own technique. It has an intense black truffle flavour.  
As they say in England, Once you go black truffle , you never go back.
 
Accompany it with a glass of Blanc de Blanc Champagne or a white wine with a bit of brioche flavors like a Chenin de Loire. As an aperitif or at the end of a meal, your choice!
